The process of roasting is as much art as science – a delicate dance between heat, time, and the unique characteristics of each bean. At The Coffee Bean & Tea Leaf®, our roast masters coax out the best from each bean, transforming them into an explosion of aroma and taste.

Inside the roaster, a delicate dance with heat begins. Over 300 flavor components slumber within each unroasted bean, waiting to be awakened. Roasting too long burns away precious flavor notes, while a short roast leaves the beans underdeveloped. Our roast masters seek the perfect balance, teasing out richness, acidity, and sweetness with each adjustment of the dial. A longer roast creates a darker bean, sacrificing some acidity for a deeper caramel sweetness.

World Blend ’63: Five Origins, Six Roasts

Our expertise in roasting and blending is epitomized our signature espresso blend, the World Blend ’63, comprising coffee beans from Central America, South America and Asia. While most coffee brands blend their coffees prior to roasting (to simplify their manufacturing processes), our roast masters have always been roasting each coffee origin separately in small batches prior to blending.

This painstaking process combined with the secret ratio of each origin within the blend creates a more complex and flavorful espresso, creating a truly unforgettable coffee experience.

The World Blend ’63 caters to a range of preferences, available in both medium and dark roasts. The medium roast delights with a delicate acidity, reminiscent of plum, dates, and exotic spices. With a passion for transforming businesses, growing brands and building winning teams and close to 30 years of extensive experience in the food service industry in both company-owned and franchised environments, Sanjiv is responsible for driving business growth for The Coffee Bean & Tea Leaf in the Americas and India.

He was formerly Chief Operations Officer for Sweetgreen where he led the Field Operations, Food Safety & QA, and Ops Services and Innovation teams. He played a key role in shaping the strategy and direction of the brand as an integral member of its leadership team.

Additionally, he was also the Chief of Operations for Dine Brands where he was instrumental in the turnaround of the brand. Prior to that, he had a multi-disciplinary global career with Yum Brands, spanning assignments in Dallas, London, and New Delhi.
